My mother and I were advised to add Greek yoghurt to our diet. We struggled to find a clean, organic, preservative-free option we could trust day after day.
So I made my own. After much research, many failed batches and stubborn iterations, I zeroed in on an 18-hour artisanal process with organic A2 desi milk - and later, organic peanut mylk for our plant-based folks.
What began as care for my family slowly became something the community asked for by name.

Three things, none of them shy: organic A2 desi cow milk, an heirloom yoghurt culture passed down by my mother's neighbour in Mangalore, and time. No stabilisers, thickeners, milk powders, or preservatives - ever.
Our milk comes from a small herd of indigenous Gir and Sahiwal cows raised on a single farm two hours outside Bengaluru. They eat what cows are supposed to eat - green pasture, dry fodder, the occasional jaggery treat. We pick up milk twice a week in steel cans and culture it the same evening.
Glass jars only - re-usable, returnable, and absurdly satisfying to hand-wash. Every batch goes out with a paper-and-twine seal and a return label for sending the empties back. Plastic-free, except for the lid liner (we're working on that).
We work directly with the dairy on rotational grazing, native-grass restoration, and zero growth-hormone protocols. Manure composts back into pasture; antibiotics are reserved for genuine illness, never prophylactic. Slower, harder, more expensive - and you can taste it in every spoon.
Ayurvedic texts describe yoghurt as dadhi - a living food whose virtues depend on slow, patient fermentation in earthen or steel vessels. We honour that approach: 18 hours of low, even warmth, no shortcuts with industrial cultures. The result is dense, gently tart, and easier on the gut than anything you'll find in a supermarket aisle.
